Based in Yosemite National Park; The Pastry Chef is responsible for all aspects of bakery production, food safety, and all other activities which support food quality and Operational Excellence
Develop innovative ideas for bakery shop products taking into account client requests, special diets, and student comments
Ensure quality, consistency, and adherence to standards based on Aramark Operational Excellence
Estimate food consumption and requisition or purchase food, select and develop recipes, standardize production recipes to ensure consistent quality, establish presentation technique and quality standards, and plan and price menus
Assist in supervision of kitchen personnel with responsibility for hiring, discipline, performance reviews, etc.
Ensure component compliance with sanitation and safety requirements
Coordinate activities with other internal departments and participates in management team meetings
Interface with vendors and key service users within client organization
Directs the production of high quality baked products with an emphasis on creativity, eye appeal and taste.
Trains and schedules staff as required for all functions in the bakeshop.
Controls both labor and food costs in the bakeshop through proper controls and scheduling techniques, as directed.
Responsible for addressing work problems and implementing fair and consistent disciplinary procedures.
Supports and ensures compliance with the Company’s environmental initiatives.
Performs other duties as assigned by management. Produces all wedding and specialty show cakes for property and Yosemite.

Advanced knowledge of the principles and practices within the food profession is required; this includes experiential knowledge required for management of people and/or problems and excellent oral, reading and written communication skills.
Candidate must be willing to be hands on with staff and operations and be willing to work event-based hours that include evenings and weekends.
Must have a culinary education degree, ACF certification or equivalent work experience.
Requires the ability to work in a high stress environment. Must possess the ability to maintain a good rapport with peers and supervisors.
Must possess five (5) years baking and pastry experience.
Must possess the ability to work with minimum supervision and work flexible hours, including split shifts.
Must be able to read and comprehend current union contract, policies and procedures and loss control procedures.
Must be able to prepare miscellaneous written reports.
Ability to perform basic computation and accounting.
Requires a high level of concentration and attention to detail.
Must have ability to work independently, prioritize work and make decisions regarding correct formatting of work.
